Those of you who have been following Mika's Pantry may notice a certain lack of desserts on my blog. I'm more of a savory, spicy, wine and cheese kind of girl. I'm not really into sweets per se but yesterday was my dear husband's birthday and at his request I made Carrot Cake Muffins.

Taco Spaghetti




This is one of my kids (and husbands) favorite weeknight dinners.

I'm allergic to tomatoes so sometimes I have to be very creative when making pasta dishes. It seems like almost EVERY pasta dish has tomatoes in it. Well.......this one doesn't and it's still yummy!

Tandoori Chicken, Turmeric Basmati, Fried Halloumi and Naan




This dinner turned out fabulous! The chicken is so flavorful and moist and the rice with yogurt sauce goes great with the salty fried halloumi.



I love how the halloumi turns such a gorgeous brown after it's pan fried.

Pumpkin Pancakes




We woke up this morning to a crisp breeze and cooler temperatures.

The first thing I thought was "Fall is finally here!"

I LOVE this time of year..........
with
pumpkins, autumn leaves, wearing boots, big chunky sweaters, football and tailgating.

Shish Kabobs, Fried Halloumi, Rosemary Garlic Bread with Olive Oil and Balsamic Vinegar


Jim and I enjoy working in the kitchen together and try to make Sunday night dinners just a little extra special....and it was.

We made shish kabobs with beef and chicken and used a teriyaki marinade.

Buffalo Chicken Salad


Here is another quick and easy dinner for weeknights.

Buffalo Chicken Salad is one of Jimmy and my favorite dinners.

It has all the flavors of the classic buffalo wings but has the fresh crisp salad and crunchy croƻtons and celery with that creamy blue cheese dressing.

Roasted Garlic Blue Cheese Burgers on Asiago Cheese bread






To roast the garlic take two bulbs of garlic, chop off the top 1/4 of the head and drizzle with olive oil. Put in foil and roast in a 400 degree oven for about 35 minutes or until soft and caramelized. After cooling, squeeze out garlic and mix with a little kosher salt and olive oil to form a paste.

Freezing Bananas for Bread



If you have bananas going bad.... here is a great way to freeze them.

Since making Tessa Kiros banana bread a few weeks ago, I really hate to see bananas getting tossed in the trash when they get too ripe. I've tried just sticking the whole thing peel and all in the freezer but I think it's hard to get the peel off and it's really messy.

Jim and I tried an experiment with our food saver and it works beautifully! Just mash up your bananas.

Tropical Salsa



This is my all time favorite salsa, it just screams of Summer! Since we are celebrating the end of Summer this weekend I though it would be appropriate. It's great with tortilla chips, on fish, fish tacos or on chicken.  The best part is that it is extremely simple!


Meatball Pesto Subs


Jim and I were talking on our way back from biking around Lake Hefner this morning and decided we needed to make some pesto to freeze. We were also talking about what to make for lunch.........I was hungry for meatballs..........so...........viola!

Homemade Taco Seasoning Mix



I use Taco Seasoning mix in a variety of different dinners but I don't like buying the pre-packaged store mixes which are loaded with salt and preservatives. Homemade seasoning mix is much healthier and tastes much better as well. I like that I can add as much kick as I want from the cayenne cause I like it spicy!
